Breakfast Tacos


This past weekend I made a great decision and made these tacos.  Tacos are an entire food group in my world and breakfast is one of my favorite ways to do it.  They’re delicious, messy, and you will love them.  This isn’t even really a recipe so much as a jumping off point, because these are so customizable.  The possibilities are endless.

Breakfast Tacos

Serves 2

  • Flour tortillas
  • 1/2 c white onion
  • 1/2 c cubed steak
  • 1 egg
  • 1 avocado
  • Queso fresco (or cheddar)
  • Salsa verde
  • Sour cream

1.Sautee onions with a small amount of olive oil. When they begin to caramelize add steak to pan.  Cook to to desired doneness and sprinkle with cajun spices. (my favorite is Dinosaur BBQ’s Red Rub, obviously because I’m from Syracuse. I can’t help myself.)

2. Scramble 1 egg

3. Prepare 2 tortillas on separate plates, top with steak and onions, egg, avocado slices and queso fresco.  Add sour cream and salsa verde as desired.
